Dear friend, You know that refined carbohydrates like white bread, pasta, sugar, cakes and sweets can lead to obesity and dental and health problems... Plus, spelt grains need to be stored in airtight containers in a cool, dry and dark place. No wonder farmers turned to wheat while detesting its much more nutritious 'relative' ... Farmers hate it, and have been 'hiding' it for decades! Today spelt is growing in popularity among discerning consumers who value its nutty flavour and high nutritional value. What is spelt anyway? Spelt should not be confused with oats or wheat, it is a member of the same grain family but is an entirely different species. As an ancient grain, like millet, and amaranth, spelt has not been manipulated to meet manufacturing needs. What makes spelt different to wheat is that it contains different nutritional values. Spelt has fewer calories and 10 to 20 percent more protein than wheat flour. Many people with wheat allergy find themselves able to tolerate Spelt. That's because spelt has high water solubility, so the nutrients are easily absorbed by the body thus making it a gentle food for the whole digestive tract. It is an excellent source of B-complex vitamins, a very good source of manganese, and a good source of niacin (good for your cardiovascular system), thiamine, and copper. Unlike common wheat which loses its hull when harvested, spelt kernels have to be transported to a special factory for the hull to be removed. The hull is harder to remove but it protects the grain from pollutants and insects and enhances the retention of the nutrients in the kernel and improves freshness. Is spelt safe for you if you're wheat-intolerant? Many people with wheat intolerance found that they can eat spelt without allergic reactions. However... Individuals with wheat-related conditions like celiac sprue or gluten sensitivities should consult with their healthcare practitioner before experimenting because spelt still belongs to the "gluten grains" family. It's noteworthy to say that wheat is unquestionably a more common source of food reactions than spelt. Wonder why? If you over mix spelt, it will break down. Spelt still contains gluten, but... The gluten in spelt is water soluble. It's easily broken down by mixing action. Wheat gluten, in contrast, does not break down in water and seems to get stronger as it is mixed. During the digestive process, wheat forms a bolus which remains a ball making it harder to digest, spelt, on the other hand, is easily broken apart. Spelt impressive nutritional profile, along with ease of digestibility, make it a fantastic and delicious alternative to wheat flour products. Spelt is generally available in its whole grain and flour forms. Pastas and bread made entirely from spelt are also available.
